In Italy, every region, province or town, has its special Christmas Eve’s supper culinary tradition, with at least one specific recipe or ingredient that should never miss. Eating Capitone on Christmas eve (eels) is a tradition common to various regions, Friuli, Veneto, Comacchio in Emilia Romagna, Naples and Apulia. Regourously fried in Naples, grilled, baked or stewed in other places.

Capitone in Umido

(Serving 4)
Ingredients
Eels in Tomato sauce;
1 kg eels (previously skinned); 300gr onion;
1 garlic clove; 1 tbs wine vinegar;
2-3 tbs extra virgin olive oil;
1-2 tbs tomato sauce;
salt; freshly ground pepper.

Preparation
Chop the onion and garlic and place in a saucepan with olive oil over a moderate heat. Fry gently for a few minutes, then add the vinegar.
Stir in the tomato sauce and add a glass of water, salt and pepper to taste and let it simmer over a gentle heat for 15 minutes. Then add the eel, previously cleaned and cut into 2-3 cm pieces and simmer for 30-45 minutes without stirring. Sprinkle with parsley and serve hot.

It is really nice idea to enjoy Christmas event . I will try this recipe at this Christmas & also share my experience of cooking with my family as well. we should adopt such tradition, in respect to enjoy Christmas in better way like interchanging christmas card etc.

A great Christmas recipe idea, but I will change eels to some other type of white meat fish found here in the Caribbean, we'll be spending ours in an Antigua holidays way. What is the best wine, or rum that you can recommend with these rich fish-tomato recipe?

What should every region have

What should every region have in common on Christmas would be the Artificial Christmas Trees in an effort to create awareness for climate change, forests need protection and Christmas traditions need to adapt to a better preservation system. As for eating capitone on Christmas eve I don't know what it tastes like but I know how it feels like, we have our own traditional food on this special occasion.
