Tiramisù, anyone?

Tiramisù, anyone?

On Saturday 155 residents of the Swiss- Italian town of Porrentruy spent 14 hours at their local ice rink making the biggest tiramisù in the world. The dessert, measuring 8 cm high [almost 3 inches] measured 59 square metres [c. 538 square feet] in area. Here are the ingredients for those of you wishing to try this recipe:

*799 kilos [1,761 lbs] mascarpone

*6,400 eggs

*350 litres cream [739.68 pints]

*189 kilos sugar [416.67 lbs]

*300 litres coffee [634 pints]

*35 kilos cocoa [77.162 pints]

*66 litres liqueur [139.48 pints]

*64,000 savoiardi biscuits

The finished tiramisù weighed 2,310 tonnes [5,092.678 lbs] and has been declared the largest ever made by the Guinness Book of Records. Yesterday the good folk of Porrentruy were said to be queueing up for a taste.

Tiramisu

The best Tiramisu I've had was made by the baker who invented it. Hands down the best.

tiramisu, the authentic recipe

the original recipe of tiramisu actually had no liqueur or wine at all. This fantastic dessert which is appreciated all over the world and has a become a symbol of Italian cuisine has been invented in the '70s in Treviso by a cook named Loli Linguanotto. He wanted to have a dessert good for families, children and adults alike. He used the light and airy Italian lady fingers however at that time people also used Pavesini which is a commercial name for "biscotti di Novara", another version of butterless light cookies.

The original recipe and hostory of Tiramisu can be found on Linguanotto's website
http://www.tiramesu.it/chi_sono.html (in Italian)

Here is my version of it in English, a little more history and a little Marsala which is indeed a million time better than any of those artificially flavored coffee liqueurs

Tiramisu

Just like practically every family in the UK has a "traditional / special" family recipe for making trife, so it is in Italy with tiramisu...
The Italian friend who taught me her family recipe many years ago uses "pavesini" biscuits...and to my mind these are much better than savoiardi as so much lighter. "langues du chat" would be a good subsitute if no pavesini available in the UK
Also - the recipe above doesn't stipulate - but the most commonly used liqueur - if you can call it that, is marsala...
